(Meaning ‘white from black’, this style of sparkling wine follows the traditional Champagne-style of methodé traditionellé, crafted from dark-skinned fruit to capture the aromatics of dark grapes without the presence of tannins.)

Delight in a creamy texture adorned with notes of honey and dried fruits. This sparkling wine reveals aged complexity, culminating in a crisply balanced finish.
Pairing Recommendations:
Perfect for simple evenings and significant celebrations. In particular, Oysters Kilpatrick and strong flavoured cheeses.
Winemaking Notes:
Crafted from our estate-grown, low-intervention Pinot Noir grapes. Handpicked early from our ‘Hummocks’ block to preserve bright, vibrant acidity and freshness. Then left on lees for four years before being disgorged.
